English muffins, toasted 4
slices tomato 4
poached eggs 4
mayonnaise 1/2 cup
lemon juice 2 tbsp
chopped fresh parsley 1 tbsp
lemon zest 1 tsp
salt 1/4 tsp

Method

  1. Flat Grill: Preheat grill to 350°F and heat burgers for 8 to 15 minutes from frozen state, turning frequently to avoid excessive browning.
  2. Lemon Mayonnaise: In small bowl, whisk together mayonnaise, lemon juice, parsley, lemon zest and salt. Set aside.
  3. Heat oil in large skillet set over medium heat; sauté garlic for 1 minute. Add spinach; cook for about 2 minutes or until wilted and moisture is evaporated. Sprinkle with salt and pepper.
  4. Place burgers on bottom halves of English muffins. Top each with 1/4 cup sautéed spinach, tomato slice and poached egg. Drizzle with lemon mayonnaise. Cap with English muffin tops.
